Put a unique twist on your pies with this super scrumptious Sweet Potato Pie! Sweet Potatoes are just an overall great food to cook with–baked, boiled, mashed, turned into soup, casseroles, and even…pie! The sweet combo with the walnut crust is just mouth watering!
Ingredients
For the Filling
2 large sweet potatoes , baked
3/4 cups coconut milk (canned)
6 tbsp maple syrup
5 tbsp coconut palm sugar
2 eggs
2 tbsp coconut oil, melted
1 tsp vanilla
1/4 tsp cinnamon
1/4 tsp ginger powder
1/8 tsp cardamom
1/4 tsp salt
½ cup crushed pecans
For the Crust
2 cups walnuts
1 tsp baking soda
1/4 tsp salt
2 tbsp honey + 1 tsp maple syrup
Directions
1. Preheat oven to 350 degrees.
For the crust
2. Measure walnuts, baking soda and salt into the food processor and blend until finely chopped.
3. While the food processor is running, add the honey and syrup and mix until sticky dough forms.
4. Press into a Pie Plate or tart pan (preferred), and bake for 5 minutes.
For the Filling
5. Puree baked sweet potatoes in food processor.
6. In a large mixing bowl, mix coconut milk, maple syrup, coconut sugar, eggs, and coconut oil.
7. Add vanilla and spices. Stir in sweet potato puree and pour mixture into a pre-baked Crust. Top it off with the crushed pecans.
8. Bake for 35-40 minutes, or until the center is set. (Note: check after 25 minutes since the crust is very delicate, you have to make sure that it doesn’t burn).
