Mood Food!🥑 (and the tastiest one at that- this recipe for avocado chocolate pudding is SO Yumm-ooo, and of course packed full of healthy fats, and antioxidants).

Did you know that food and nutrition has the power to impact your mood and emotional health? Our brain and nervous system contain an abundance of fat, in fact the brain is over 60% fat. A diet of processed and refined foods contribute to inflammation, anxiety, stress, and depression. January can be a very difficult month for most people which is exacerbated by the low light, cold temps, lack of vitamin D, and overall low feeling that Jan brings.
I have a full schedule of nation-wide media and education events next week on this very important topic from a holistic/natural perspective of the impact of food and mood.

Don’t discount the power of the choices you are making each day when it comes to mindfulness, movement, nature, food, laughter, sleep, friends and family. The best thing we can do for our mental health is to become knowledgeable, make a plan, and try our best each day to cover these pillars of health.

Food is power, and food can heal.

Looking for a last minute treat for the weekend? Look no further, @karlenekarst has you covered! This Cranberry-Orange Chocolate Bark is a guaranteed crowd pleaser.

Ingredients:

• 2 x 85 grams chocolate bar – preferably 70% dark
• 3 drops of edible orange essential oil
• ¼ cup raw unsalted cashews – roughly chopped
• 2 tablespoons pistachios – chopped
• 1 tablespoon pumpkin seeds
• ¼ cup dried sweetened cranberries
• 1 teaspoon orange rind
• Generous pinch of flaky sea salt

Directions:

1. Add all the nuts, seeds and cranberries into a bowl and set aside.
2. In a double boiler on the stovetop melt the chocolate. Once melted, remove from heat, and stir in the orange oil.
3. Cover a medium rimmed baking tray with parchment paper.
4. Use a silicone or rubber spatula to spread the chocolate evenly over the center area of the baking sheet – aim for about ¼″ thickness.
5. Sprinkle the nut mix evenly over the chocolate. Lightly use your palms to press the toppings into the chocolate.
6. Next sprinkle the orange rind and sea salt. Place the tray in the fridge for 1 hour to firm up.
7. Once the chocolate is completely hardened, use your hands to break it into pieces. Serve immediately, or cover and store at room temperature for up to 1 week. Can be refrigerated for up to a month.
