Raspberry Balsamic Dressing

Makes 1 cup (250ml) 

This simple and refreshing Raspberry Balsamic dressing will become a frequent visitor in your kitchen. Vibrant colors from fresh raspberries add such great character to any fresh spring mix salad. Sprinkle over some goat cheese and pecans for a buttery and crunchy bite.


1/2 cup fresh raspberries 
3 tbsp balsamic vinegar 
1 tbsp dijon mustard 
1/2 shallot, finely chopped 
1/4 cup extra virgin olive oil 
2 tbsp Sea-licious Raspberry Lemonade 
Salt and freshly ground black pepper 


  1. Puree all the ingredients in a blender of food processor until emulsified. 
  2. For a smooth dressing, strain through a fine-mesh sieve into a bowl 
  3. Season to taste with salt, epepr and more balsamic vinegar if desired. 

If not using right away, store in an airtight container in the refrigerator for up to 5 days. 

Stir well before using.
