Pumpkin Protein Bar

Looks like dessert, eats like the most delicious protein bar ever! I’ve posted this recipe before but it’s such a good one that when I made it this morning I’ve decided to re-post so that hopefully you will feel inspired to do a little baking this weekend. It’s so nutritious, delicious and makes a great breakfast, snack or after dinner treat. You decide when, but try stopping at just one piece. I’m ready for a coffee break.

Ingredients 

1 cup organic pumpkin purée 
1/2 cup almond butter 
1/2 scoop vanilla whey protein powder (I like Kaizan brand)
1/2 cup maple syrup
1 tsp vanilla 
2 eggs
1 tbsp chia seeds
1/2 cup gluten free flour (I like Cloud 9)
1/2 cup almond flour (or you could do 1 cup of gluten free rather than almond)
1 tsp baking soda
1 tsp cinnamon 
1/4 tsp nutmeg 
1 cup rolled oats 
1/4 cup dark chocolate chips (optional). Other options are pumpkin seeds, hemp hearts, ground flaxseeds, chopped walnuts etc)

Directions 

Preheat oven to 350 degrees. Spray 9×11 pan with non stick spray (I like coconut oil based one). In medium bowl mix pumpkin, almond butter, protein, maple syrup, and vanilla. Beat in eggs. Stir in flour, baking soda and spices until smooth batter. Stir in rolled oats and chocolate chips. Bake 15 minutes or until knife comes out clean.
