Hemp Crusted Chicken
Take hemp to a whole new level with these delicious crunchy chicken bites. We all know that kids love finger foods, bite-sized pieces and anything you can dip. This is why chicken “fingers” and fish “sticks” are such popular choices for kids in restaurants and in pre-packed convenience foods. I love to take take favorite recipes among adults and kids and make them healthy. This is a recipe that each member of your family will love and that you can feel good about. The hemp seeds are the base and deliver a big serving of protein, fibre and healthy fats, which are my nutrition mantra for each meal and snack. These chicken fingers can be dipped in hummus, tzatziki or your favorite dip, and make a great week-night meal as well as an excellent left over option for lunches. Enjoy!
Ingredients for Hemp Crust
1 cup organic hemp hearts (I like Manitoba Harvest brand)
1/4 cup italian bread crumbs
1 tbsp of panko bread crumbs (for extra crisp)
1 tbsp grated parmesan cheese
1 tbsp of nutritional yeast
1/4 tsp sea salt
cracked pepper (to desired taste)
Mix these ingredients in a bowl.
In a separate bowl, use one egg and beat.
Take your organic chicken breasts, wash and pat dry. Slice into thin strips. Take each strip and wash through the beaten egg then into the bowl with the hemp and coat. Place on a baking sheet lined with parchment paper. Bake at 350 degrees for 30 minutes or until chicken is fully cooked. Enjoy!
