This hearty dish has a crunchy, nutty flavor that is wonderful as a side dish or as a complete meal. It has hints of sweetness from the saffron while it also has a citrus-y taste from the orange. 1 cup quinoa
2 cups filtered water
1⁄2 cup fresh yellow pepper, chopped
11⁄2 cup fresh zucchini squash, chopped (yellow or green zucchini will do)
1⁄3 cup fresh parsley
1⁄2 cup slivered almonds
1⁄4 cup Veg-licious Camelina oil
2 tbsp apple cider vinegar
1 tsp sea salt
1 piece orange (juice of the orange)
1-2 threads saffron
1 clove garlic, minced
