Creamy Citrus Dressing

Makes 1¼ cups (310 mL)

Bursts of orange, lemon and lime with a bit of cashews are the main features of this healthy and delightful creamy dressing. So easy to whip up, this dressing is ideal for your on-the-go days! Drizzle over fresh, seasonal greens or add it to coleslaw for extra jazz!

Ingredients

1 orange, peeled, seeded and chopped 
1 lemon, peeled, seeded and chopped 
1 lime, peeled, seeded and chopped 
1/4 cup raw, unsalted cashews 
1/4 cup chopped red onion 
1 garlic clove, minced
2 dates, pitted 
2 tbsp rice vinegar or white wine vinegar 
2 tbsp Sea-licious Tangerine Lime 
salt and freshly ground black pepper, to taste 

Directions

  1. Place all the ingredients in the bowl of a blender or food processor and purée until smooth.
  2. Season to taste with salt and pepper 

If not using right away, store in an airtight container in the refrigerator for up to 1 week.
