Citrus Cilantro Dressing

Makes 1 cup (250 mL)

This citrus cilantro dressing adds an explosion of flavors and is delicious over a bed of leafy greens with black beans, avocado, grilled corn and prosciutto bits. Tanginess from the fresh lime and orange juice with a slight kick from the jalapeno peppers makes this dressing the perfect pairing with any of your favorite dishes.

Ingredients 

1 cup cilantro leaves 
1/4 cup freshly squeezed lime juice (about 3 limes) 
1/4 freshly squeezed orange or tangerine juice 
1/2 garlic clove, minced 
1 tsp dijon mustard 
1 tsp honey 
jalapeno pepper, seeds removed and chopped (optional)
1/3 cup grapeseed oil or light olive oil 
2 tbsp Sea-licious Tangerine Lime 
Salt and freshly ground black pepper, to taste 

Directions 

  1. Purée all the ingredients in a blender or food processor until the cilantro is finely chopped and the dressing is smooth.
  2. Season to taste with salt and pepper.

If not using right away, store in an airtight container in the refrigerator for up to 5 days. 

Stir well before using.
