A very good morning to all of you! I was inspired by all this beautiful snow around me (if only we didn’t need to drive anywhere), and these Coconut Snow Balls are the perfect healthy treat to bring a little bit of winter in your kitchen! And literally I used 3 ingredients- dates, shredded coconut and sea salt)! I’ve also made them with dark cocoa powder in the past which is super delicious as well. These snowballs also make a great DIY gift for your friends and family, or to take as a hostess gift to your next holiday party! Enjoy!!
Coconut Snow Balls
After soaking dates in water transfer to a food processor. Blend until smooth. Add in 1.5 cups of shredded coconut blend again. Add pinch of salt. Form into balls and then roll through remaining coconut!
