Chocolate Zucchini Protein Bread

What better way to celebrate the weekend than with this delicious Chocolate Zucchini Protein Bread. If you are thinking of doing some baking over the weekend, this one is great as its seasonal–time to use up some of the delicious zucchini! Great to pack for lunches, for an after school snack or when you have a craving for something chocolate (um, hello every day). Enjoy!

Ingredients 

1 cup almond flour
½ cup brown rice chocolate protein powder (I like the VegiDay Decadent Chocolate brand)
1+ 1/3 cup zucchini, grated
3 tablespoon coconut sugar
1 whole organic egg
¼ cup plain Greek yogurt
½ cup dark chocolate chips 70%
3 tablespoon coconut oil, melted
1 teaspoon vanilla extract
2 teaspoon cinnamon
1 teaspoon baking soda
Pinch of salt

Directions 

1. Pre-heat oven to 350 degrees F
2. Mix all the dry Ingredients (almond flour, chocolate protein powder, coconut sugar, cinnamon, baking soda, salt), in a large mixing bowl
3. In a separate mixing bowl, blend Greek yogurt, egg, coconut oil, vanilla extract and add the mixture to the large mixing bowl containing the dry ingredients and mix well
4. Stir in the zucchini and the chocolate chips
5. Spray a loaf pan with coconut oil or other organic cooking spray and pour in the batter
6. Bake for 30-40 minutes or until the toothpick comes out clean
7. Let the bread cool completely before serving
8. Enjoy with a cup of almond milk!
