BEST Vegan, Gluten Free Banana Chocolate Chip Mini Bites

Super quick (under 20 minutes), simple ingredients, full of nutrition and loaded with flavour! These banana chocolate chip mini bites hit the spot and will become your go-to snack this summer. They are dairy, egg, AND gluten-free, making them a crowd pleaser for brunch, playdates, or an afternoon at the beach. I recommend doubling the recipe and freezing them! Enjoy!

Ingredients

1 cup mashed banana
1/2 cup coconut oil
1/2 cup almond milk
1/4 tsp vanilla
2 tbsp chia seeds
1 cup gluten free flour (I like cloud 9 brand)
1/2 cup coconut sugar
1/4 tsp baking soda
1/4 tsp baking powder
1/3 cup mini chocolate chips

Mix wet ingredients in bowl. Mix dry in separate bowl. Add dry to wet and stir till just combined. Use mini muffin tins for bite size goodness. Bake at 350 for 14 min or until toothpick comes clean.
