Omega-3 Energy Bites

Roll up your kids nutrition with these delicious Omega-3 Energy Bites. Your kids work hard at school all day and the mental and physical energy they use require a ton of “Brain food”. After school my kids are literally starving, so I like to have healthy snacks ready for them to tie them over until dinner. Often we only have a few minutes in between school and activities, so these omega-3 energy bites provide a delicious, complete treat for them.

These balls pack bite size goodness in every bite and are full of fibre, protein and healthy omega-3 fats. You can vary the kind of nut butter you use from peanut, cashew, almond or a combination of all. The hemp seeds and ground flaxseeds are undetectable, yet pack a powerful nutritional punch. 

In a bowl mix the following ingredients:

1 cup of dry gluten-free rolled oats

1/2 cup of natural nut butter

1/2 cup of ground flaxseeds

2/3 cup of coconut flakes

2 tbsp of raisins

1/4 cups of vegan chocolate chips (I like either enjoy life or camino brands)

1/4 cup of raw,  unpasteurized honey (liquid honey is easier to mix in this recipe)

1 tsp of vanilla extract

1 tbsp of hemp seeds

Mix all ingredients with a wooden spoon. Use a small ice cream scooper to form balls. Place on parchment paper and cool. 
Keep refrigerated.
