Nutty Quinoa Salad

Makes 6+ Servings

This hearty dish has a crunchy, nutty flavor that is wonderful as a side dish or as a complete meal. It has hints of sweetness from the saffron while it also has a citrus-y taste from the orange. It is a perfect meal as it is packed with tons of protein, carbohydrates, amino acids and healthy fats. Served warm or at room temperature, you’ll definitely come back for more!

Ingredients

1 cup quinoa
2 cups filtered water
1⁄2 cup fresh yellow pepper, chopped
11⁄2 cup fresh zucchini squash, chopped (yellow or green zucchini will do)
1⁄3 cup fresh parsley
1⁄2 cup slivered almonds
1⁄4 cup Veg-licious Camelina oil
2 tbsp apple cider vinegar
1 tsp sea salt
1 piece orange (juice of the orange)
1-2 threads saffron
1 clove garlic, minced
tomato and avocado, to garnish

Directions

  • Bring the water to a boil, add quinoa and seasonings
  • Cook the quinoa until it becomes fluffy
  • Mix Veg-licious Camelina oil, orange juice, apple cider vinegar, sea salt and saffron. Use this as the dressing.
  • Take quinoa off the heat, set to cool. Once cooled, stir in all ingredients including the dressing and adjust seasoning to taste.
  • Serve at room temperature or heat it up slightly on the stove.
  • Garnish with tomato, avocado and more slivered almonds
