Lemonade Herb Vinaigrette

Makes 1 cup (250 mL)

Talk about zesty lemon delight! This easy to make lemonade herb vinaigrette marries beautiful flavors of citrusy lemons, honey and Dijon mustard with fresh fragrant herbs for the perfect balance. Drizzle over fresh spinach, goat cheese, strawberry and walnuts and you are in heaven!

Ingredients 

1 1/2 tsp finely grated lemon zest 
1/4 cup freshly squeezed lemon juice 
2 tsp dijon mustard 
1 tbsp white wine vinegar 
1 garlic clove, minced 
6 tbsp extra virgin olive oil 
2 tbsp Sea-licious Raspberry Lemonade 
3 tbsp finely chopped fresh herbs (chives, tarragon, parsley, dill or basil) 
Salt and freshly ground black pepper, to taste 

 

Directions

In a bowl, whisk the lemon zest and juice, mustard, honey, vinegar and garlic.

  1. In a small bowl, stir the olive oil and Sea-licious Raspberry Lemonade.
  2. Slowly drizzle into the lemon mixture while whisking constantly until emulsified.
  3. Stir in the herbs and season to taste with salt and pepper. 
  4. Let stand at room temperature for 20 minutes, allowing the flavors to marry before using.

If not using right away, store in an airtight container in the refrigerator for up to 5 days. 

Stir well before use.
